Interface colors

Hi. Googling I found a lot of questions about how to change the colour of the interface and no answers. I'd like it to be something other than grey, but the real problem is the menu items. I can hardly make them out. Surely, please, there must be some way to change from small black type on a dark grey background!?

The person saying it cannot be done should not interrupt the person doing it.
