I am unsure about restrictions on the trial, however, when you choose to encode your file (render) go to File-->Render As and choose a template that is High Definition or HDV depending on your desired output. Then you can click the custom button and tweak to your heart's content.

If you want to ensure your timeline is in HD, change your timeline properties to match your files (they should match to begin with). It is the white sheet icon on your toolbar.
