Copying Media Files

How can I copy media files from 2 partitioned hard drives to another hard drive?
I have been searching this forum for copying files to another hard drive but have come up with nothing. So, my question is how do I copy a projects media files onto a new hard drive? The project files are spread across 2 drives that have been partitioned into about 20 smaller drives.
Normally, I would have just copied all the drives on the finder level. But, I'm weary of that process because each partitioned drive has its own AVID MEDIA FILES folder.
The project was on Avid Xpress and I transferred everything over to MC 3.0 last year. So, now I need to make a back up of the project. Then send the media files to another facility for an edit.
