I just tried Emerge effect myself and it didn't do too much for me either. Which is a shame because it's a really cool looking effect in the preview.
I did mess with the text animation settings and when I changed the Fill & Stroke method to "All Strokes Over Fills," I got an effect that looks somewhat like the preview. (This will only work if you have a stroke on the text to begin with.)
