Personally, I'd try to persuade you to work at 720P (1280 x 720) that way you'll be ready for any application - letterbox or center cut on the 1024 x 768, full screen on the 1200 x 800, and HD distribution in one swipe. Just be sure to guard your edges with enough safe zone if you plan on doing the center cut.
If you design it big, you can always make it smaller. It's much harder to go the other way. If there's any possibility of it being shown on the widescreen format - design within those dimensions to save yourself a headache in the future.
