You could expand the matte, but then you would probably get a soft edge. The website uses a technique that looks more like a paper and scissors job, which could be approximated with the pen tool. But it's really a matter of preference.

They could have used stills. I noticed choppy animation randomly started and stopped, but you could mimic that by taking multiple photos and making, as you say, image sequences.
