The 2100 is the same as the 2000 but for one minor distinction; it has two filter wheels instead of one. The 2100 is sold in the Asia/Australia/NZ region.
Would I ditch a 2000 for a 3000? Well, it all depends on your priorities. If you value having the absolute crispest/sharpest picture in a video camera, and that is worth a $20,000 upgrade, then yes that's what you'll get with the 3000. But you'll be giving up a bit too, such as 720p mode (the 3000 doesn't do 720p mode) and thus you'd also lose 720pN mode.
I dunno, it's all up to you as to whether you think the extra sharpness is worth another $20,000 (plus whatever you'd lose in trade-in value). But the 3000 also supports CAC, which is very nice, and the 2000/2100 doesn't.
I don't know of any sites that offer 3000 footage yet.
