How is this Effect Done

Hello all,

I have a pretty simply question. I've seen this effect done on numerous website but haven't been able to figure out how it's done. I hoping someone out their can help me.
The effect I'm referring to is on http://www.bubbasparxxx.com/. How do you isolate him from the background with non-pixelated edges.
