When you first build the volume, under "advanced settings," you can set the file stripe which is default at 16kb, and that is fine. On the next screen you drag and drop your LUNs into their respective pools. Metadata to the metadata pool and data luns to the data pools. You can click on the "Data" pool name or double click and it will bring down a screen to change the "number of blocks" for that pool. When you change that number you'll see a number on the side in parenthesis change with you. That changing number is your "transfer size." When you set the number of blocks to 64 that number to the side should read 1MB.

If you have a StorNext background these names will be foreign as Apple liked to rename everything.
