We have an Xsan setup here that is very similar to what you are proposing.

Here are some key points:

As long as you have backups of your configuration files, having one MDC might be OK - assuming you don't care about downtime!

If you have 2+ MDCs, you can upgrade your Xsan software without having to incur downtime by failing over to your standby while doing the upgrade.

If you want to reshare your SAN over NFS, SaMBa, or AFP - you probably don't want to do that on your only MDC.

If you are following the suggested setup, you'll want to configure Open Directory - Including handling Xsan fail-over, your standby controller is well used as an OD replica (or even as your primary OD server).
