You can also go straight from your deck/camera to a standalone DVD recorder if you still have the tapes.

I think iDVD is also really easy way to make quick-and-dirty DVDs.

You could also make an Automator script to do it all for you with Compressor and DVD Studio Pro. I love Automator.
