I'm not that knowledgeable of scripts either, but this is what you should do.
The first scripts, which go from your angle (or main) menu to the angles are this way: first they set the angle and subtitle stream with the "set system stream" command. Then they modify a GRPM value (you can rename that value so its easier to track, you do that in the script inspector) using the "set grmp" command with the mov operation and you choose "inmediate"as source type. You can choose anything as source value, but choose something that makes sense ("1" for angle 1 and so on). And the script's third action is to jump to your video track. If done properly, it will display the correct angle and subtitle.
Your left and right arrows scripts work this way:
The command is "set system stream" and, for instance the right arrow, it will jump to angle and subtitle 2 if (check compare command) the GRPM value you've selected in the first script is "1". Repeat for all four angles and put a jump command pointing to your main menu in case the script is broken somewhere.
