Dont expect to match the quality of Hollywood. The images they encode are much higher quality than what you are used to. On top of that, they used very high end encoders with highly experienced compressionist at the helm. Also, DVD is MPEG 2 so you will never match the quality of what you're editing.

First you need to do a bit budget to determine what bitrate to use. There are several available on line. I would then output a 720x480 (16x9 anamorphic)uncompressed QT and bring this into your encoder.

BTW, Compressor is a poor MPEG 2 encoder in my opinion. Have you looked into Bitvice or the Cinemcraft?
