First, let me tell you a story. In the past long gone, about 1998, I used to tell frustrated clients that were bombarded by the customers phone calls about non-working discs that I cannot guarantee a proper playback in any shithole the end user might stick the replicated DVD.
This is one thing actually done properly by Apple. There are zillions of cheap out of spec players out there now that might not read properly UDF format, but relying on ISO-bridge format instead. For those players using underscore in disc names is crucial, so the playback can still be achieved.
So there is nothing unprofessional about using underscores
