The best advice I can give is to make sure you use Compressor for the encoding - not DVD-SP's built in engine. You'll get much better results, and it's even faster - at least with my g5-Quad.

All the being said - start with the Compressor Presets - best Quality - 90 minutes, etc.

I usually work in short form (under 10 minutes), and I've found that a One-Pass Constant Bit Rate cranked up to 8.0 has been pretty good. I've read that if you go higher than that, you'll likely start to overload cheaper consumer DVD players and old computers. But you'll probably need a lower average bit rate, so try it once with a 2-Pass variable, and once with One_Pass Constant - and see what looks better.

As far as the media - I've used many different kinds over the years, and have never had a consistent playback problem that could be traced to bad media. Of course, with a wedding video - longevity might be your biggest concern. Sorry I don't have anything to add to that, but I'll bet some magazine has done some research on it, and you could find it on the web.
