Play All button: Scripts vs. Stories

I have a rather large Instructional DVD project (around 6 GB) that I?m trying to finish.
I?m having a problem determining the best way to create a ?Play All? button. In the past, I?ve used scripts (somewhat successfully), but a friend of mine mentioned that Stories would be easier.
I?m looking for the basic and established functionality of:
- Play All button plays a designated set of chapters in order, returning to the Play All button when complete
- During Play All, users can skip forward and backward chapters if they desire
- Users can also navigate to a chapter menu, select a desired chapter for viewing which a. skips to the next or previous chapter if they want, and b. at the end, returns to the chapter menu (I know this is somewhat separate from the ?Play All? functionality, however it is related).
Most of the advice on using Stories for ?Play All? recommends that you move all video/audio assets into a single track then assign chapter markers as appropriate.
I can definitely figure this out by searching through the manual, and here on the Cow. But before I do, I was hoping I could get some general comments and responses to these issues and questions:
- Are scripts better then stories for my application, or vice versa?
- Do mainstream Hollywood movies use this ?one track? method?
- If I put all the media assets into one track, how will this affect the size of the VOB files that are created in the muxing process?
Note that re-encoding as a single file in FCP is not an option for my application.
