Well actually in an optical printer it is technically a sort of double exposure since they would be doing double passes on the "master" negative, i.e., exposing the film twice.

Apparently the difference is the in a film dissolve it's combining two negative images wheras in a video dissolve it's combining two positive images, which gives a slightly different look to either of them. (One way of constructing/deconstructing a Screen node would be to have an Invert node after your image (turning it to negative), then using a IMult node to combine with a second image, then using another Invert node to make the image positive ("normal").
