There are a couple of ways to do this. One simple way is to:
Create a null object
Parent it over your text
Set a 'zero' keyframe at the last motion of the original animation
Make your 'new' move from there with the null...
Another wat to do it is, as Jeff said, you need to change the curve between the two moves:
Open the Timeline view, in Graph
"Light up" your transform points
"Light up" the two (X Y) points just BEFORE the overshooting curve you want to eliminate
Roll select the Interpolation to 'Linear' or 'Constant' (depending on how you want to get to the next move..)
