I don't want to come off as harsh or unhelpful, but perhaps the reason nobody replied before was because you have so many questions, and many of them are either rather broad, very VERY broad, or at least would require much effort to write a detailed enough post to cover all the possible answers to your question. I'd suggest doing some research about the many topics you're asking about so you can formulate some more specific and educated questions.

I myself do not know the specifics of non-NTSC conversions, but I will say that I believe you have 60i and 60p confused in your example... 720p60 can easily be used to create 60i content, and could also be played at 30p to act as a half-speed slowmo.

Perhaps some people with more experience in standards conversions and theatre/festival formats will find the time to chime in, I wish you luck.
