Just let the camera roll. How long does it take to complete a full sunrise? Certainly less than 60 minutes! So start the camera, let it roll straight through, and then import the footage in your NLE and speed it up to whatever time-lapse-equivalent speed you're looking for.

Just heed proper precautions about pointing your lens at the sun and you should easily get what you're looking for.
