The law stipulates you'd be able to use, for example, Mozart's Requiem composition without copyright infringement, but you would not be able to use a current recording of that work, like something performed by Saint Martin in the Fields performing Mozart's Requiem. IOW, you're free to use the sheet music however you want to record your own work, but you cannot use someone's current recording of that music without permission.
I'd go the stock music route. Revostock.com has music for cheap. You can find some gems in there.
