When you drop the Dolby preset onto your file, load it into the Inspector. In the Encoder pane, go into the Audio tab. At the bottom there is Dialog Normalization. Set that to -31dBFS. I encountered this a while back and...

if you do an Apple + A in the timeline, it will select all the clips. Then just assign a color to them. All your clips that are in your timeline will be colored in your bin then. I understand it...
