put the colors in the Luminance channel (make the color in the Color channel be the same or black or turn the Color channel off or you will get a different color)...

You can animate the Material in the Texture tags 'Tag Properties' (so you animate from one material to another) or you can animate the color of one material. Both are more or less the same....
