I'm new to Livetype and wondering if there is an "easy" way to use a different font for the blueprint LiveFont? Does Fontmaker allow you to just edit the original script and replace the default font?

No and no. In brief, each LiveFont is made from 107 to 137 individual, high resolution QT movies (one for each glyph). The change a font you need to make each movie again. Fontmaker simply compiles the movies into a LiveFont. You'll find more information if you search through this forum's archives and look in the Appendix in the LiveType Help/manual.

There are a couple of 3rd party LiveFont providers: Screen Caffeine, LiveTypeCentral, Optimistik, and if I've forgotten anyone forgive me :)

What is that you find wrong about Blueprint? It is terribly difficult to read in its default appearance but there are many ways to improve its legibility depending on your needs and the background.
