How do I make MPEG-1 Files? Manual doesn't seem to explain it. I don't see it in the export options in QT PRO. Any suggestions for settings? Or audio? mp3 or AC3? This stuff will be played out of a program called media shout. on PC's

If your on a PC, get Tmpeg http://www.tmpgenc.net
The Mpeg 1 encoder part of it is free and wont expire.
Export as Program stream which will include the audio (Mpeg 1 layer 2).
For NTSC use 352 X 240, 29.97 fps and a bitrate of 1700-2500 kbps. This can play double size and will look good. A CD will hold about 40 minutes at 1700 and 25 minutes at 2500kbps.
