I've got a ZR 30 (very similar). I know what it feels like being stuck on the go without any manuals... no fun. =( Here's what you do:

[a. whether this is the correct config]
YEP! Good guess. =)

[b. what the next step is]

1. Put the VHS player in playback pause mode, a few secs before where you want to start.
2. Turn the ZR25 to VCR mode (yes, you're right).
3. On ZR25, press REC-PAUSE (LINE-IN) button (it's in the mess of buttons behind viewfinder.

4. Start playback on the VHS player.
5. Hit the Pause/Play button on ZR25 to begin recording.

6. When you get to the point where you want to stop, hit the Pause or Stop button on ZR25.
7. Stop playback on VHS player.
