The Apple QuickTime MPEG-2 encoder has been optimized for speed, not for quality. It also has a known problem with gamma shift. If you want your animations to look better, you may want to use a different MPEG-2 encoder. The Heuris MPEG Power Professional 2.5 encoder will give you better quality, at lower data rates than you can achieve with the Apple encoder, and I have never heard of anyone complaing about gamma shift with Heuris.
