There are two ways to get a wireframe effect:

1.) As mentioned above, render in draft mode. The way to get around the lo res quality is to make your comp size at least 3 or 4 times video res and then scale down the rendered movie.

2.) Use a grid as both a texture map and transparency map. It takes a little tweaking to get everything to line up and look cool, but works pretty well. There was a really terrific example of this online somewhere, I'll try and track it down...
