[Rafi Bagramian] "If I'm done with a project and I delete the captured files, hasn’t Vegas already saved what it needs for that project? "

If you are totally finished with the project, save the VEG file, SFVidCap file, any "extra" material such as images and WAV files, and the original tapes. You can recreate the project from there.

[Rafi Bagramian] "If I've sent it out to Architect and have it saved as an Authored project. Will deleting captures in Vegas affect this in any way? "

If you have already created the DVD (i.e. have the Video_TS and Audio_TS folders) and are satisfied that you are completed, you can delete both the original project files AND the intermediate MPEG2 and/or AC3 files.
