Well your already shooting on a compressed format.
Looking at your output preferences, I'd say check into Media100's iFinish. It's lossless compression and realtime capabilities are what your looking for while it's DVD and streaming friendliness expand your options. It's $17k pricetag is quite affordable as well.
You can get into Final Cut Pro3 for a grand and put it on your existing mac. You could then spend another 2 grand on a DVD burner and an authoring program and be set.
Upgrading your toaster to VTNT is another option that won't break the bank.
Any of these import animations fine.
FYI, you can find used beta decks (uvw1800) often for as little as 5 grand. Didn't see a beta deck in your list so I thought I'd mention it. I see no need to purchase another DVC Pro deck unless you go the FCP route. Component is fine (and suggested) for the other systems I listed.
As for a second camera, check out sony's vx2000. It's a great little camera and comes in under 2 grand.
