1) You have a couple of options - with your existing Mac's you can add a Pinnacle Cinewave card and Final Cut - the real additional expense here is going to be the high end drives and controller to do uncompressed.
Your other option is a DPS Velocity card - it's less than $3K, will capture uncompressed, but will require you to get a new PC. The big beefit will be that you only need about 3 fast drives to get uncompressed. The biggest drawback is that there's no real time with uncompressed footage.
The best uncompressed option is the Targa3000 system. About $21K will get you a turnkey with 3 layers of real time uncompressedd video and 5 graphic layers.

2) All of these will work fine with your compositing and animation programs - the Targa3000 will ship with Commotion

3) Component will do fine - your only better option would be SDI
