As far as I know, RAM will not help render times (at least not significantly), but RAM will help you with how large a scene you can render (poly count). Processor performance is pretty much the only factor for rendering.

On the other hand, if you so little RAM that you have to use Virtual Memory, in some situations that could definitely affect render time.
