Work with a book project, so you can have all students working independantly on their sections. Have 1 or 2 students handling the images doing color balancing and using a naming convention that makes it easy to place and manage the files such as by student name.psd.

You should be able to select the fields in for example microsoft access database and paste that ascii text into InDesign. Filemaker can export your data to a tab or return delimited file. Give that file to your Phtohsop person, so they can copy and paste to name the files reducing error and typing.

I posted a few weeks/months back explaining the basics of working with books, incase you need help with that.
