Are you asking why the need for both character & paragraph styles? Paragraph styles have extra settings such as space after a paragraph, justification, and apply themselves to the entire paragraph. Charcter style are when you just want a few letters or words to be different than the paragraph style, such as italicizing type
You need to convert RGB images to CMYK in Photoshop. If you are not getting the correct amoutn of Black generation, you solution is actually in edit >> color settings > CMYK: custom CMYK >> Black Generation.
