When adjusting exposure by zebra alone, I set the zebra to 71%, open up so that the subject's face is hot, then stop down until the zebra disappears. If I know I have very strong back light, I will keep some zebra on edges. This will get you by in most scenes; you have to depend on your experience to know if overall lighting ratios are acceptable, but even if you have burned out areas or blocked-up shadows, the exposure on the human face is usually paramount.
